Description

This is an introductory course for the entering student designed to provide the foundation of human nutrition requirements through various stages of the life cycle and in a variety of sociological environments. Instructional approaches include the utilization of Blackboard, a web based program designed to enhance learning in the attainment of theory and fundamental nutrition applications. Concepts and objectives are presented utilizing the Commission On Accreditation for Dietetic Education 2008 Foundation Knowledge and Competencies for Dietetic Technician Education and evidence based principles of nutrition theory as a framework. Students are introduced to basic nutrition principles and their application, including the six basic nutrient groups, digestion, absorption, and metabolism.
