Description

This course designed to provide the foundation of medical nutrition therapy practice in the care of individuals with problems based in nutrition, building on fundamental concepts acquired in NUC 101 and 102. Instructional approaches include the utilization of Blackboard, a web-based program designed to enhance learning in the attainment of theory and fundamental nutrition applications. Concepts and objectives are presented utilizing the Commission On Accreditation for Dietetic Education 2008 Knowledge and Competencies for Dietetic Technician Education and evidence-based principles of nutrition theory and standards of professional practice. Students are introduced to the language of health care and its application particularly as related to utilization of the medical record, nutritional screening, assessment, and patient/client interviewing techniques.
